For the Baked Mozzarella Cheese Sticks, you will need:

Egg Roll Wraps – not to be confused with the spring roll wraps found in the ethic food aisle at the grocery store. Usually you will find egg roll wraps in the produce section of your grocery store. Look next to the bagged salads or in that area.

A package of string cheese – I used the Frigo brand.

Baking Sheet

Aluminum Foil

Extra Virgin Olive Oil and/or Cooking Spray

I chose to make 12 Cheese Sticks, so I used 6 full sized string cheese and cut them in half. This seemed to work perfectly. Next I lined a baking sheet with aluminum foil and sprayed it with cooking spray for easy clean-up. I used one full egg roll wrapper and rolled a ½ sized string cheese in it, placing each one on my baking sheet as I was finished.  I proceeded until all 12 string cheese were wrapped. I then brushed the top of each of the finished cheese sticks with EVOO. If you don’t have EVOO, you could always lightly spray them with cooking spray. Bake in a 400 degree oven for about 10 minutes or until the tops are golden brown. Remove from the oven and flip the cheese sticks. Brush again with EVOO  and bake for an additional 8 minutes so both sides are golden brown.
