Veggie Pot Pie

Ingredients:

Extra Virgin Olive Oil
Salt & Pepper (season every layer)
1 Sweet Onion (Diced)
4 Carrots (Diced)
4 Yukon Gold Potatoes (Diced)
5 Stalks of Celery (Diced)
3 Cups of Peas
A couple of pinches of thyme
1 pad of butter
3 spoonfuls of flour
1 1/2 cups of milk
3 1/2 cups of vegetable broth
Double batch of pie crust (or 2 store bought pie crusts)
Cooking Spray

*Don’t forget to use a knife to make a couple of slits in the pie crust before baking.
